My favorite post workout Sunday brunch – protein pancakes!
Recipe:
- 1/4 cup rolled oats
- 1/4 cup Greek yogurt
- 1 whole egg
- 1/4 cup wild blueberries
- 1 scoop of protein powder
Blend it up in the blender, flip in the frying pan! I use a teaspoon of coconut oil in a cast iron skillet, but a non-stick pan is just as good. I use BSN SYNTHA-6 Vanilla Ice Cream for my protein, and my macros are based on that.
Approximate macros: 414 calories, 13g fat, 37g carbs (8g fiber, 7g sugar), 37g protein.
